Tonyo didn't start in Singapore. It started at a charcoal pit in the Philippines, with two brothers who thought every family deserved a proper roast on an ordinary weekday.

In February 2021 two brothers opened a small litson (roast) house with almost no money and one rule: the chicken has to be worth queuing for, and it has to be affordable enough that nobody needs a reason to buy it. They did everything themselves: marinating overnight, roasting each batch, bagging orders, sweeping up. The neighbourhood noticed. Then the next one did.
Five years on, the marinade hasn't changed: garlic, soy, cane vinegar, calamansi, a little sugar and a lot of patience. It's the flavour half the Philippines grew up on.

This year one of the brothers flew to Singapore and spent months in the MR Ramen kitchen at Edesia Casual Dining, working the line and asking one question over and over: what happens when litson meets ramen?
Adobo went into the shoyu tare. Calamansi went into the miso. Our karaage got the litson marinade before it got the batter. The nori crunch wrap borrowed the idea of rice-and-roast-in-one-hand from a thousand Filipino lunch boxes. Every dish was cooked, argued over, thrown out and cooked again until both kitchens said yes.
Tonyo is the result: a new brand from MR Ramen and Tonyo's Litson House. Japanese comfort food, built on a Filipino roast, priced for a normal Tuesday. Sarap.
